I work on a research project to improve the quality of lactic ferments (stability) and specialy on the understanding of carbon metabolism in the model bacterium Lactococcus lactis. This bacterium is used in the food and biotechnology industries for its ability to produce lactic acid, flavors and proteins.
In the team, it was shown that L. lactis could implement a respiratory metabolism in the presence of exogenous heme and oxygen. Under these conditions, in stationary phase, L. lactis biomass is increased with better survival. My current work is to understand the impact of this change on the bacterial physiology.
